Fresh pasta ingredients:
For the yellow dough:
150 gr. of flour 0
50 gr. of durum wheat semolina
2 medium eggs
For the green dough:
150 gr of flour 0
50 gr of durum wheat semolina
50 gr of spinach
For the filling:
350 gr of mixed minced meat (beef, pork)
150 gr. spinach
50 gr. of parmesan
Extra virgin olive oil
1 glass of white wine
Salt & pepper
Yellow dough: pour the flour on the pastry board, create a recess in the center and add the eggs. With the fork mix and start incorporating the flour until you absorb the liquid part and continue to knead with your hands until you get a smooth and soft dough. Cover it with plastic wrap and let it rest for about 30 minutes.
Green dough: wash the spinach, let it dry in a pot (without adding water) and when they are ready squeeze them well and pass them to the mixer or cut them with a knife.
Pour the flours on the pastry board, in the center break the egg and add the spinach starting to knead with the fork and then finish with your hands obtaining a soft and smooth dough. Let it rest half a day wrapped in plastic wrap.
Fry the meat with extra virgin olive oil, once the bottom has dried, deglaze with the wine raising the heat. Once the alcohol has evaporated, add salt, pepper, a little water and cook another 15/20 minutes over moderate heat and covered with the lid.
Wash the spinach, drain and let it dry in a pan for a few minutes. Drain them, squeeze them well and chop them with a knife or mixer. Add to the meat, mix everything well, season with salt and pepper and nutmeg. The filling must be compact and dry.
Pull the dough thin, cut rectangles of 6×4 cm (the side of the candies, or the side of the 4 cm, can be cut with the toothed wheel). Spread the filling along a longer side, roll up, press with your fingers to adhere the dough well between the sides of the filling. With your fingers pinch the ends as if to form a candy.
To taste you can cut the green stripes and attach them to the yellow rectangles (and vice versa), brush over with a rolling pin to make them adhere well and then continue with the closure.
Cook the candies 5/6 minutes in boiling salted water and season to taste
