A young Calabrese chef who grew up in Cosenza, in various kitchens of well-known restaurants is gradually teaching healthy and true Italian spirit trying not to distort the true essence of “being Italian” as unfortunately happens abroad and especially in America where everything is Americanized.
The main goal of Pino (Michele) is to be able to re-propose traditional recipes, following classic methods in the preparation and cooking of them, with traditional tools and typical products used by previous generations in Calabria and beyond!
In fact, Michele seeks and uses only high quality Italian and Calabrese products to promote his own territory.
One of them is “Chianu i Piru” in Dipignano in Cosenza. An estate where the best products in the area is produced (as our chef explains) and you can easily taste a completely KM0 (zero km) menu.
