Pastafrola: la historia de la tarta dulce favorita de los argentinos

Diremos que la historia de la Pasta Frola se inicia en Italia pero que la influencia de las diferentes comunidades inmigratorias que llegaron a la Argentina durante la primera mitad del siglo veinte, la convirtieron en un postre típico de nuestro ADN.
Famosa por ser una de las tartas dulces más populares de nuestro país, además de un ícono para acompañar el mate, el té o el café, puede venir rellena con membrillo en su versión clásica, con dulce de batata e incluso con dulce de leche.
La receta de pasta frola se ha difundido en todos nuestros hogares de la mano de la tradición familiar, pasada muchas veces en forma oral o en papelitos que atesoramos con nuestra receta.
Pero el relleno es otro tema. Porque al final hablar de pasta frola es hablar de un postre internacional. El relleno clásico argentino, que es casi exclusivamente de membrillo, no es tan típico en Italia. “Las crostate italianas tienen sus variedades: damascos, duraznos, frutas rojas. Los membrillos son una fruta popular en Turquía, en los países de Medio Oriente y en España. Los españoles, lo han hecho propio al haber convivido con la cultura árabe por mucho tiempo. Y llegó a la Argentina de la mano de los inmigrantes procedentes de Medio Oriente y de España. Nuestra pasta frola entonces se da por el uso de una masa italiana rellena con un dulce español“. Y una inspiración austríaca decorativa.
Así como los argentinos somos una fusión de inmigrantes de diferentes países europeos, se puede asegurar que la pasta frola comparte este multitudinario origen.

And it came to Argentina with immigrants from the Middle East and Spain.
Our Pasta Frola is then given by the use of an Italian dough stuffed with a sweet Spanish”. And a decorative Austrian inspiration.
Just as Argentines are a fusion of immigrants from different European countries, it can be assured that the Pasta Frola shares this multitudinous origin.
